This week, I whipped up the world’s largest batch of buttercream and partnered up with the wonderful people at Hobbycraft to have a go using their incredible range from Sugar and Crumbs.
Sugar and Crumbs, supply a fabulous range of baking accessories, but they are especially well known for their Natural Flavoured Icing Sugars. Their flavours range from Raspberry Ripple, Chocolate Orange, Strawberry Milkshake and Jaffa Twist to name just a few.
If you follow my Instagram Page you will know that I made Minty an Aurora birthday cake flavoured with their Raspberry Ripple Icing Sugar last year which was a huge hit.
I had a rather significant birthday last week and I wanted to make myself a bright, Spring themed cake, so I was beyond excited to get a chance to try the Sugar and Crumbs range of Russian Tip Nifty Nozzles. Cakes decorated with these mind blowing tips are all over Instagram and Pinterest at the moment.
Aren’t they amazing looking! With these nozzles and a lot of buttercream you can create beautiful cakes really very easily.
I am going to share a few tips with you, to help you use these nozzles and then give you an opportunity to win a couple of your own along with a pack of Sugar and Crumbs, Pink Lemonade Icing Sugar. Obviously I will give you a peek at my birthday cake as well.
Things you might need:
Sugar and Crumbs – Russian Tip Nifty Nozzles
Sugar and Crumbs – Icing Sugar
Butter
Food Colouring – I use Wilton Colour Gel because they don’t make the buttercream runny.
Cling Film (optional)
Tips for using the Russian Nifty Nozzle:
- When mixing your buttercream, use an electric mixer and mix until you can get it as white as possible. If the buttercream is too yellow it will interfere with the food colouring and blues will come out green etc…
- One of the first things you will notice about these nozzles is that they are huge, much bigger than the nozzles you may be used to using and they have a flat end. Therefore you will need a much larger hole at the end of your piping bag.
- When piping with Russian Tips you want to hold the flat part of the tip against the cake with the piping bag pointing straight up. This will ensure the petals form evenly.
- If like me you want to use real butter for your buttercream you will need to add a touch of milk to ensure the buttercream is creamy enough. If it is too creamy the flower will collapse and loose definition and if it is too hard it will be difficult to pipe and may not stick to the cake.
- A small leaf between the flowers will fill in spaces and make the finished cake look more complete. This 67 leaf tip from Wilton is perfect.
- Practice, practice, practice… some flowers can be piped quite tall, some can’t. It is definitely worth having a practice run before you go straight to the cake.
Here are the four tips I used on my cake.
These flowers look fabulous with a touch of colour running through the middle of the buttercream. It is really easy to achieve this by spreading one colour of buttercream across some cling film and then adding a thin line of a different colour buttercream to the middle. Roll the buttercream up in the cling film and snip off the end.
The cling film sausage can then be inserted into the nozzle and you can pipe lovely two tone flowers. I used this technique on my birthday cake. I piped onto an ombre pink buttercream made from the Sugar and Crumbs Pink Lemonade Icing Sugar, which I decorated with edible gold leaf and gold balls.

Ooh, what fab nozzles. I seem to remember some wonderful birthday cakes made by mum when I was very young. The smell of the buttercream icing and the burning candles has stayed with me more than the cakes themselves. Sorry, mum!

The best cake that I have seen was a birthday cake made by my daughter for her Nanna when she was 12. She put so much love and care into it that nobody noticed the imperfections just the effort. It made my Mother so happy.

When I was 7 my Grandmother made me a doll cake. The doll form was on top of the cake and the cake formed the skirt. Grandmother had carefully piped layers of ruffles in pink icing. I was so excited.
