Oh Easter! Sweet festival of Chocolate!
Easter is possibly my favourite holiday, heralding the start of the spring Equinox. Ishtar ascending from the Underworld, Eostre with her sacred hare and eggs symbolising rebirth and renewal.
Sweet treats have been an important part of these celebrations from early sweet breads to the chocolate eggs we all love today.
This year I have made the children Egg Shaped White Chocolate Truffles which are both cute and very easy, requiring basically only two ingredients. The kids loved them they were a huge hit. They really love homemade treats and have reached an age where they appreciate the effort. The recipe is simple enough to let little ones join in if supervised, but I can’t guarantee they won’t help by ‘testing’ the mixture as you go.
350g White Chocolate Chips
100g Condensed Milk
A Drop of Vanilla Essence (optional)
White Chocolate and Sprinkles to Decorate.
Heat the white chocolate chips, condensed milk and vanilla essence in the microwave for approximately 30secs. You need to be careful not to over cook the chocolate or it can become grainy. Mix well until the ingredients combine and then cool in the refrigerator.
Shape and place back in the refrigerator.
Melt the white chocolate and dip the truffle, ensuring they are fully covered.
Stand back as the family stampedes to the kitchen to eat the lot. Repeat.
