These are a perfect summer treat for the scorching hot weather we are experiencing at the moment. They contain prosecco so are purely for the grownups, but they should certainly take your mind off the fact that your lawn is probably brown and you have to walk the school run in 80 degree heat later!
Making lollies with alcohol can be tricky as it has a higher freezing temperature than water and therefore you need to ensure you get the balance right between maintaining the flavour and not ending up with slush puppies (although these would taste pretty awesome as slush puppies!). It took a few attempts to get it right but I got there in the end… (hick….!)
375ml prosecco (half a bottle)
375ml cold water
A good slug of elderflower and rose cordial – I used Belvoir as it is a personal favourite of mine.
Natural pink food colouring (optional)
Mix the ingredients together. You can add a dab of pink food colouring if you want to make them vivid pink.
Split between a lolly mould. I used this fabulous silicone mould which makes 10 lollies. However there are all sorts of amazing lolly moulds on the market this year, or you could just use empty yoghurt pots and reuse old lolly sticks, they taste just as good!
Freeze for approx 12 hours.
Please Please, be careful to mark these lollies as ‘Adult only’ and keep out of reach of little ones.
Also remember that you should not drink and drive and these lollies do contain alcohol.
