Salted Caramel Dark Chocolate Truffles

Food trends come and go across social media, one week everything contains spinach, and the next week it is Matcha (I still have no idea or interest what this is…) however, Salted Caramel is one food trend that I am holding onto!  I love it in every form imaginable, but especially in these scrumptious Salted Caramel Dark Chocolate Truffles.

They would make a lovely homemade gift.

Caramel

Caramel Sauce

Recipe: 

  • 300g Caster Sugar
  • 75ml Water
  • 250ml Single Cream
  • Pinch of Salt Flakes
  • 75g Butter

Method:

First you will need to make the caramel.  You do this by mixing the water and sugar in a pan and stirring over a low heat until the sugar has dissolved.  Bring the sugar solution to a boil without stirring.  This is really important, if you stir it or interfere with it in any way at this stage, the mixture will crystallise.  Boil until mixture turns a lovely golden colour, it can burn really quickly so you need to watch it the entire time, ignore the phone, switch off the door bell and lock the kids in a cupboard (please note DO NOT lock your kids in a cupboard!!!!)  This part should take approximately 8-10 minutes.  If it does crystallise, just throw it out and start again, it happens to everyone occasionally.

You now need to add the cream.  This will bubble up, so be careful.  You need to whisk very quickly, as the caramel will start to harden when you add the cold cream.  Add the salt and then whisk until it reaches a smooth consistency.  Now add the butter, once you have whisked this into the mixture it will have a lovely smooth glossy consistency.

This can be put in a jar and kept in the fridge for use later.   There are so many wonderful recipes for Caramel sauce, one of my favourites being, licking it off a t-spoon straight from jar.   Hmmmmm caramel is awesome!  But for this recipe we need only 1/2 a cup.

Dark Chocolate Salted Caramel Truffles

Recipe:

  • 1/2 Cup of Hot Salted Caramel Sauce – (If you don’t want to make it yourself you can buy it, I wont tell I promise)
  • 200g of Dark Chocolate (the darker and higher the cocoa content the better, I LOVE Green and Blacks Organic 85% Dark Chocolate)
  • Cocoa Powder for Dusting

Method:

Add the hot sauce to the chocolate chunks and the wait for the chocolate to start melting.  As it melts mix well to combine.

Place the mixture in the fridge until it is firm enough to roll into balls.  This should take a couple of hours.

I made 9 truffles out of this recipe, but I guess it depends on how large your balls are…

Roll in the cocoa powder.  I sprinkled a bit of edible glitter over mine as they were a gift.  You can then pop them in a little box, if they are for a friend or into your mouth if they are for you!

There are no appropriate words for how tasty these are!
